(Food-Beverage-News.Com, July 20, 2014 ) Glasgow, UK -- Coconut oil is well known for being high in health-giving antioxidants and now a recent study published in the Food and Function journal has shown that coconut oil produced by the wet-milling process is the highest in antioxidants.
Antioxidants are invaluable to good health as they are believed to protect the body from common diseases such as cancer and heart disease.
The study was carried out by the Department of Biodiversity at the University of Kerala in India. The study compared a traditionally produced virgin coconut oil with sunflower, olive oil and refined coconut oil so that the researchers could establish the antioxidant levels.
The virgin coconut oil used in the study was created using a low tech method, which used a low-level heat. It had often been thought that using a low-level heat could destroy the antioxidants, however, the study showed that this wasn't the case.
In recent years, some producers had turned to using a no heat method of producing coconut oil to reduce the risk of destroying vital antioxidants, however, it was found that rather than reducing the level of antioxidants, heating the oil increased the levels of antioxidants.
It was shown that this simple method of producing virgin coconut oil provides a superior product. The study from the University of Kerala is just one of a number of other studies that have shown that the low-level heat method of creating coconut oil increases antioxidants.
Virgin coconut oil also offers a superior quality than other forms of coconut oil.
