The mat was chosen because of its ease of use, durability, lifetime guarantee and the fact it is both FDA approved and certified Kosher, BPA and FPOA-free. "A lot of work went into the development and design of the baking mat," said company spokesperson, Becca Katz.
"In the design stages, we knew we needed something that was non stick, wipe and wash clean and yet still met the Kosher dining requirements so many people want in their cookware."
"The mat excels when baking cookies, meat and fish and many other items" said Ms. Katz. "The mat fits into cookie sheets or other low-wall baking trays. Because it is also flexible, just lift a corner and the entire mat comes right out of the tray."
The company selected food-grade silicon to cover and seal the fiberglass base. The Federal Drug Administration, the federal agency which oversees food safety, has approved this grade of silicon for cooking purposes for years. Many people already use cookware that has silicon.
"It's safe. Most people don't understand that as a natural element, silicon is the most abundant element in the earth's crust, second only to oxygen. Silicon is a part of porcelain and many ceramics. Scientists have also recently learned that trace amounts of silicon are necessary for the human body," Ms. Katz said.
Other items selected for the Bistro Association top 10 are carbon steel knives, Kitchenaid stand mixer and an immersion blender.
