In the days leading up to Thanksgiving, the EPA has embarked on a social media campaign to raise awareness about the 34 million pounds of food that is thrown away in the United States every year. This waste is a source of methane, which the EPA on its website says has "21 times the global warming potential of carbon dioxide." The campaign urges people that as they take time to pause and be thankful for the bounty harvests, they be mindful of how much of that bounty goes to waste and to take measures to avoid throwing out food.
Thanksgiving dinners usually mean lots of leftovers, a great deal of which ends up in the trash if not stored properly. The USDA offers some important advice for handling leftovers. Leftovers should be refrigerated within 2 hours and used up within 3-4 days if stored in the refrigerator; if frozen, used within 2 to 6 months. They also suggest dividing up leftovers into smaller portions in shallow containers for faster cooling.
