Breads and pastries are often thought of as unhealthy due to the high energy, fat and sugar content. Luckily, Rachel Levy of Mr. Muffin Kitchenware shares some useful tips to bake healthier goodies. Levy says that first and foremost, only quality ingredients should be used for baking. Paying more for quality will pay off in the end, says Levy. "Even if you cut on the required chocolate on the recipe, you will still be assured that your creation will still come out great. The same is true for vanilla extract and butter."

Levy also reveals tips in reducing fat in a brownie recipe, which can be done by using half the required butter by pureed soft tofu. "Researchers found that more than three quarters of people who asked to taste the healthier and the original brownie recipe preferred the tofu or healthier version. This can definitely work because of tofu's neutral flavor, which still allows the chocolate flavor to still stand out. Using this low-fat version would also make the recipe rich in protein and calcium," Levy says.

A brownie recipe can be further reduced in sugar and calorie content by adding beet. According to Levy, beets can naturally add sweetness and moisture without affecting the flavor of other ingredients. Simply add two-thirds cups of finely grated raw beets into the brownie batter and reduce sugar requirement by a quarter of a cup.

Levy informs that a study conducted by a well-known university tried to replace shortening requirement for pureed white beans. Surprisingly, testers found the healthier recipe just as good as the recipe with the higher fat requirement.
