Mr. Muffin On Effective And Healthy Baking Substitutions

The customers thought that the silicone baking cups look hilarious and they loved them. Mr. Muffin representative, Rachel Levy, discusses some ways to make healthier baked treats. For Levy, there are healthy alternatives that can be made in order to reduce fats and calories or add fiber into a baked creation.

Levy says that fiber can be added into a cookie recipe by replacing white flour with the same amount of wheat flour. "Fiber is beneficial for the heart and digestive system. Because whole wheat flour is coarser than regular flour, you can start replacing a cup of refined flour for the wheat flour. You can then gradually increase the amount of wheat flour until you achieve the best balance. You can also try using white whole wheat flour if you prefer your cookies to be made with the same kind of flour. This should be lighter in texture compared to whole wheat but it also comes with the added fiber and nutrients."

Levy also recommends reducing the required amount of butter in half and then replacing an equal amount with low-fat cream cheese. "Warming and browning butter can enhance its flavor and you can just use half of the required amount and replace the same amount with low-fat cream cheese. Melt the butter in a saucepan on low heat. Stir as the butter starts to foam. When the butter turns golden brown, it can then be placed in another container to stop it from burning. When placed in a sealed container, this can be placed in the fridge up to one month," Levy explains.

Levy also reveals that when making cheesecake or pie, there is a healthier substitution for all the needed fat in the recipe. She says, "In a food processor, pulse 10 graham crackers until it becomes fine. Then, place two tablespoons of low-fat milk and process further for 30 minutes. You can then mold this mixture using a nine-inch pie dish. Bake for ten to twelve minutes at 350°F."
