First of all, Levy shares that color is one thing to always consider when cooking or baking. She says not to be scared to use colors because using them properly can make a great difference in peoples creation. It can be considered as another ingredient that needs accurate measurement. This is true for example when roasting food. Levy explains that others are too scared to burn the bacon so they take them away too early only to find that they look too pale to be considered scrumptious.
Next, if unsure that there is a forgotten ingredient or that there is a wrongly measured ingredient, do not ruin a whole batch of baked goodies but instead take a little taste. If it tastes OK, nobody will even know that the baker was unsure of his work, Levy says. If it does not taste good then everything has to be done all over again.
Levy also suggests using the senses when baking and not just rely on a timer. When the baked good starts to exude that sweet smell, it is almost done. If it lacks color, Levy says not to hesitate increasing oven temperature and observing the baked goods closely. Sometimes some adjustments have to made in order to achieve perfection and using the senses is only way to do this.
Finally, Levy reminds to dust off excess flour from pastries. When rolling out flaky dough, extra flour could be used for the table and the dough. However, always remember to brush off the excess from the pastries as flour will not taste good even after baking.
