This garam masalais based off a traditional recipe that combines 14 spices that have been roasted, grounded, and blended; these spices include bay leaves, cardamom, carom seeds, cinnamon, cloves, coriander, cumin, fennel seeds, fenugreek, ginger, mace, nutmeg, and star anise. Of special note is the curry from the kari patta leaves, which adds a pungent lemony flavor to the food. The spices are of the highest and purest specimens and should not over-power other ingredients. As they are pre-roasted, they can be sprinkled over any dish, during or after cooking. It can also be stirred into the food or used a dry rub; only a teaspoon or two is sufficient to bring out the full flavor of the garam masala.
