The wine decanter is a vessel into which wine is poured and allowed to "breathe." The process, known as oxidation, gives wine a mellower flavor, smoother finish and more pleasing aroma. During oxidation in a conventional wine decanter, air mixes with the wine over the course of 20 minutes to two hours, allowing volatile compounds that can adversely affect the taste and smell of wine to evaporate and giving the subtle flavors of the wine time to bloom.
