The preparation of Greek (strained or drained) yogurt is similar to that of regular yogurt but with an additional step in which the liquid whey (containing water, lactose, some protein, and minerals) is allowed to drain out of the yogurt mass. This results in the formation yogurt that is thicker and of a more consistent texture. The taste is similar to that of unstrained yogurt but slightly more acidic. Strained yogurt contains a higher percentage of protein than unstrained yogurt owing to the removal of a significant portion of the whey (mostly water). Strained yogurt is a staple food of the Mediterranean region, including North Africa, Southern Europe, and West Asia. It is typically made from cow's milk. Any company that calls its product Greek yogurt must conform to the federal standard for yogurt, but the claim of yogurt being Greek is not a well-defined designation.
