Polysaccharide gum, arabic gum, and guar gum are the most commonly used stabilizers and thickeners. Gelatin is another commonly used non-carbohydrate stabilizer obtained from several animal-by products. Stabilizers are hydrophilic and can be dispersed in particular solutions as colloids. They swell in water, thickening the food. Stabilizers are commonly used in the preparation of gravies, cake toppings, pie fillings, jellies, chocolate milk drinks, puddings, and dressings for salads.
