The Kensho Kitchen mandoline has one blade for highly simple ease of use and less clean up when autumn's activities are calling everyone outside.
The ceramic cutting blade, is made from zirconium oxide, an extremely sharp and hard material - second only to diamond. The blade cuts fresh produce to a wafer-thin thickness, giving it an almost translucent quality and releasing natural flavors.
The ceramic material is minimally porous and will keep the blade from transferring odors between food items. It will also last ten times longer than metal blades and is one third as light. Ceramic blades will not rust since there is no metal.
